COOKING WITH CHEF WILLIAM Enjoy the taste of the season with our very own Chef William who is head chef at University Towers on the campus of NCSU - Southern Cooking With The Big City Flavors Chef William is widely known on the N.C. State Campus as a chef with a passion for food, during his 10 plus years as dinner chef for the privately owned and exclusive University Towers, Chef William has built up a following as the premier Chef on site and across campus and is why students and non-residents come to "The Tower" for dinner! ![]() One of my all time favorites is meat loaf, I can say I have seen it done many a different ways so as I stated above their are no guidelines: Go get some ground beef and mix into it some pre cooked (caramelized) diced onions and green peppers, if you add them raw they will "release juice" into the loaf causing it to break apart. Add to this some Hidden Valley Ranch Seasoning, about half a cup of bread crumbs or croutons grinded up and add 2 beaten eggs. mix all this stuff up and pat out into a "loaf pan" and smooth the top with a little oil & water and what I like to do is place a pan underneath with water to create a double broiler effect and bake @300 til temp is 160 and to make a red sauce just get some preggo sauce and add a touch of ketchup, julienne sliced green peppers, celery and onions for a creole sauce that will make them say wow! serve with some rice or pasta.

The oven is whining, the steamers are blowing and the butter is melting... That how I roll. My best is not by sampling or reading a recipe... I feel the flavor and have a sense of timing that make my food the talk on campus. We will be putting some of the chefs recipes online soon and for an added treat you can visit University Towers, purchase a meal ticket and sample some of the chefs great food! |
